  • 100grams white chocolate melts
  • 200milliliter pure cream
  • 1/2 cup pistachios, finely chopped
  • 2tablespoons festive cake decorations or silver cachous

Method

Step 1 of 5

Cut 2 x 50cm square sheets of cardboard, then halve each sheet diagonally. Cut triangles the same size from baking paper. Roll each into a cone shape and tape or staple to hold. Slide paper inside cardboard to line. Stand cones, pointed-ends down, in tall glasses.

Step 2 of 5

Reserve 75g dark chocolate, and place remainder with cream into a medium-sized microwave bowl. Microwave in 30-second bursts, stirring in between, until chocolate and cream are fully combined. Add pistachios and coconut, reserving 2 tbs of each. Fill cones evenly with chocolate mixture and refrigerate for 3 hours or until set.

Step 3 of 5

Remove cones from fridge and remove paper-lined chocolate. Remove paper. Melt reserved dark chocolate as before.

Step 4 of 5

Paint bottom two-thirds of cones with dark chocolate and coat with reserved pistachio and coconut. Stand on a plate to set, trimming to sit flat, if necessary.

Step 5 of 5

Melt white chocolate in a microwave-safe bowl. Paint top third of cones with white chocolate and sprinkle over decorations and cachous. Chill to set, then wrap.
