Description

Tahini and dark chocolate make these light oat cookies feel indulgent.

Method

Step 1 of 5

Pre-heat the oven to 180°C/160°C fan-forced and line 2 baking trays with parchment.

Step 2 of 5

Mix the tahini, maple syrup and vanilla in a large bowl until well combined.

Step 3 of 5

Pour the oats, ground almonds, cinnamon, dark chocolate and salt into the wet ingredients and mix well with a wooden spoon. Leave to stand for 10 minutes to thicken.

Step 4 of 5

Using an ice cream scoop, scoop the dough into 12 cookies mounds, place on the baking trays and use your hand to flatten them slightly.

Step 5 of 5

Bake for 10-12 minutes until golden but still gooey. Remove from the oven and allow to cool for 5 minutes on the baking trays before serving.
