- 200grams white chocolate
- 2tablespoons double cream
- 60grams dried raspberries, 10g for dusting
- 1 pinch salt
- 80grams dark chocolate

Description
These bitter chocolate balls have an added sourness from the addition of dried raspberries.
Method
Step 1 of 6
Heat up pot to a medium heat with the white chocolate, cream and salt.
Step 2 of 6
Once the chocolate has melted, remove from the heat and incorporate 50g of dried raspberries and mix well. Allow the mix to cool in the fridge for 2 hours.
Step 3 of 6
Melt the dark chocolate in a microwave for a few seconds or use a bain marie method.
Step 4 of 6
Dip the balls into the white chocolate fully and allow to set to the side.
Step 5 of 6
With the 10g of leftover dried raspberries, crush into a powder.
Step 6 of 6
After 2 minutes of the chocolate setting, sprinkle the raspberry dust over the balls before serving.
