Description
These sweet and spiced carrot cake cookies are delicious for a tea time snack.
Method
Step 1 of 3
Pre-heat the oven to 180°C/160°C fan-forced. Mix the flour, baking powder and spices in a large bowl. Beat the sugar and butter together in another bowl.
Step 2 of 3
Tip the dry mix into the butter and sugar and beat to combine. Beat in the egg and grated carrots. Stir in the orange juice and zest and fold in the pecans and sultanas.
Step 3 of 3
Roll the mix into 14 balls and place on a baking sheet. Flatten into cookie shapes. Bake for 20 minutes until crisp and golden.
