Description
These soft cookies will become a real favourite; they have all the goodness of carrot cake in a bite-sized snack.
Method
Step 1 of 5
Preheat the oven to 180°C. In a large mixing bowl, cream together the butter and sugars with an electric hand-held whisk until light and fluffy. Add the egg and beat well to combine.
Step 2 of 5
Sift the flours, baking powder, and cinnamon into the cookie mixture, tipping in any bran that is left in the sieve. Add the carrot and raisins and stir well.
Step 3 of 5
Put heaped teaspoons of the cookie batter, spaced well apart, onto 2 baking trays lined with baking parchment.
Step 4 of 5
Bake in the middle of the oven for 12-15 minutes, until golden brown and risen slightly.
Step 5 of 5
Remove from the oven and cool for 5 minutes on the baking sheets before transferring to a wire rack to cool completely.
