Almond & Vanilla Chocolate Chip Cookies

- 75grams butter, softened, plus extra for greasing
- 100grams caster sugar
- 75grams soft light brown sugar
- 1 egg, beaten
- 170grams brown rice flour (save 20g for dusting)
- 1/2teaspoons bicarbonate of soda
- 1tablespoons cocoa powder
- 75grams gluten-free plain dark chocolate chips
Method
Step 1 of 4
Grease 3 baking sheets.
Step 2 of 4
Put all the ingredients except the chocolate chips in a food processor and whizz until smooth or beat together in a large bowl. Stir in the chocolate chips, then bring the mixture together to form a ball.
Step 3 of 4
Turn the dough out on a surface lightly dusted with rice flour and divide into 30 balls. Place on the prepared sheets, well spaced apart, pressing down gently with the back of a fork.
Step 4 of 4
Place in a preheated oven, 180°C, Gas Mark 4, for 8-10 minutes. Remove from the oven, leave for a few minutes on the baking sheets to harden, then transfer to a wire rack to cool.
