Coconut & Lemon Biscuits

10 Ingredients
- 3/4 cup currants
- 1/2 cup desiccated coconut
- 1 cup icing sugar
- 1/4 cup arrowroot
- 1/4 cup honey
- 1 lemon, rind finely grated and juiced
- 1 cup coconut flour
- 3 eggs
- 1/2 cup coconut oil
- 2teaspoons coconut oil (for extra)

Step 1 of 4
Preheat oven to 180°C. Line a baking tray with baking paper.
Step 2 of 4
Combine flours, coconut and currants in a bowl. Whisk eggs with oil and honey in a separate bowl. Stir in lemon rind and 1 tbs of the lemon juice. Add to dry ingredients and stir until combined.
Step 3 of 4
Roll tablespoonfuls of the mixture into balls, place on tray and press to flatten. Bake for 12-15 minutes until golden. Cool.
Step 4 of 4
Sift icing sugar into a bowl. Add extra coconut oil and remaining juice. Stir until smooth. Drizzle over biscuits Tip 1: These biscuits soften when stored. To refresh, place un-iced biscuits on a baking tray and bake at 180°C for 5 minutes to crisp. Tip 2: Coconut oil may solidify, depending on the room temperature. To return it to a liquid state, stand the jar in hot water.
