- 1 cup plain flour
- 125grams butter (chopped)
- 1 cup desiccated coconut
- 1teaspoons bicarbonate of soda
- 150grams white chocolate (chopped)
- 1/3 cup golden syrup
- 2 cup rolled oats
- 1tablespoons rosemary (chopped)
- 1/2 cup firmly packed brown sugar
- 1/2 cup dried blueberries

Method
Step 1 of 5
Preheat oven to 180°C. Grease and line 4 baking trays with baking paper.
Step 2 of 5
Combine oats, flour, coconut and sugar in a large bowl.
Step 3 of 5
Place butter, syrup, blueberries and 1/4 cup water in a saucepan over medium heat and cook, stirring, for 2 minutes or until butter melts. Remove from heat. Stir in bicarbonate of soda until mixture foams. Add to dry ingredients, stirring well to combine.

Add white chocolate and rosemary, mixing to combine. Roll 2 tablespoonfuls of mixture into balls with wet hands, flattening slightly.

Bake for 12 minutes or until golden. Cool on trays.
