  • 1/2teaspoons bicarbonate of soda
  • 100grams honey
  • 60grams butter
  • 60grams dark softbrown sugar
  • 1 large eggs
  • 1/2 cup whole milk

Method

Step 1 of 2

Preheat the oven to 180°C (Gas 4). Line the base and sides of a loaf tin with baking parchment. Sift the flour, spices, and bicarbonate of soda into a bowl. Melt the honey, butter, and sugar together in a pan until smooth and combined. Mix into the flour, then stir in the egg and milk until the mixture is well combined. Don’t worry if it looks very runny - this is how it should look.

Pour into the tin and bake for 30-35 minutes, or until risen and firm to the touch. Leave to cool completely in the tin before serving.
