- 1tablespoons icing sugar
- 3 eggs, separated
- 1 cup caster sugar
- 80grams unsalted butter, melted
- 2 lemon, juiced, rind finely grated

Method
Step 1 of 4
Preheat oven to 180°. Grease a 6-cup ovenproof dish with a little of the butter.
Step 2 of 4
Combine flour, sugar and lemon rind in a bowl. Whisk 1/3 cup lemon juice, egg yolks, milk and remaining butter together in a jug. Gradually whisk into flour mixture until smooth.
Step 3 of 4
In a separate clean bowl, beat egg whites until stiff peaks form. Fold into lemon mixture, in 2 batches, until just combined. Pour mixture into dish.
Step 4 of 4
Place the dish in a large roasting pan and add enough boiling water to reach halfway up the side of the dish. Bake for 30-35 minutes or until puffed and golden. Sprinkle with icing sugar. Serve immediately.
