  • 1teaspoons baking powder
  • 1 1/2 cup plain flour
  • 1/2 cup milk
  • 1/4 cup icing sugar, sifted
  • 125grams unsalted butter, softened
  • 1 lemon, zested (plus 1/2 lemon juiced)
  • 2 free range eggs
  • 1 cup caster sugar
  • 2tablespoons pistachio kernels

Method

Step 1 of 4

Preheat oven to 180°C. Grease and line a 22x12cm loaf pan.

In a bowl, cream butter and sugar together, using electric beaters, for 3-4 minutes or until fluffy and pale. Add eggs, one at a time, beating well between each addition until creamy. In a separate bowl, combine flour, baking powder, 1/2 tsp salt and zest. Gradually beat into cream mixture, alternating with milk, until combined.

Transfer mixture to pan and smooth top. Bake for 55-60 minutes or until a skewer inserted into the centre comes out clean. Cool in pan for 5 minutes before turning out onto a wire rack to cool completely.

Meanwhile, to make the icing, stir icing sugar and lemon juice together until smooth. Pour over cooled loaf and sprinkle over pistachios. Slice and serve or store cake in an airtight container for 2-3 days.
