Method

Step 1 of 4

Grease a 17 x 27cm slice pan. Line base and sides with baking paper, extending paper 3cm above edges.

Step 2 of 4

Place peanuts, dates, salt flakes and 1/2 cup water in a food processor and process until almost smooth and combined. Using back of a metal spoon, press mixture into base of pan to compact. Clean food processor.

Step 3 of 4

To make the date ‘caramel’, place dates, peanut butter, 1/2 cup peanuts and 1 cup water in a food processor and process until smooth and combined. Spread ‘caramel’ over peanut mixture and sprinkle with remaining peanuts. Chill in fridge for 30 minutes or until firm.

Step 4 of 4

To make choc-peanut drizzle, place peanut butter and oil in a microwave- safe bowl and microwave, uncovered, on high for 30 seconds or until melted. Add cocoa and syrup, stirring until combined. Pour mixture over date ‘caramel’ and smooth top. Chill in fridge for 2 hours or until set. Serve.
