Description

Use five ingredients to combine the flavours of rice pudding and creme brulee into a delicious dessert with a perfectly caramelised top and surprise jam filling.

Method

Step 1 of 3

Combine milk, vanilla and 1/3 cup sugar in a large saucepan over medium heat. Cook, stirring, for 10 minutes or until almost simmering.

Step 2 of 3

Add rice, reduce heat to low and cook, stirring occasionally, for 30 minutes or until rice is tender and liquid thickens. Remove pan from heat and cool for 5 minutes. Remove and discard vanilla bean.

Step 3 of 3

Divide jam among 4 x 11/2-cup capacity ramekins. Spoon over rice mixture. Place on a large baking tray. Sprinkle remaining sugar evenly over rice puddings. Using a kitchen blowtorch (see tip), caramelise sugar. Serve warm.
