  • 125grams butter, chopped
  • 1teaspoons vanilla extract
  • 200grams dark cooking chocolate
  • 4 scoops ice cream (to serve)
  • 2 eggs
  • 1/2 cup brown sugar

Method

Step 1 of 4

Preheat oven to 180°C. Grease 4 x 1 cup ramekins and place onto a baking tray.

Step 2 of 4

Break chocolate into pieces and place into a small saucepan with butter and brown sugar. Melt over low heat until melted and smooth. Cool for 5 minutes.

Step 3 of 4

Lightly whisk eggs and egg yolks together and gradually stir into chocolate mixture with vanilla. Sift flour over mixture and gently fold in.

Step 4 of 4

Divide mixture evenly between ramekins. Bake for 20 minutes until top is set but centre is still soft. To serve, puddings can be turned out onto a plate with scoop of ice-cream placed into the centre.
