  • 1/4teaspoons salt
  • 1 1/2 cups self-raising flour
  • 1 large egg
  • 2tablespoons sugar
  • 1tablespoons cinnamon
  • 0.50L vegetable oil (to fry)
  • 1teaspoons cinnamon (for sugar mix)
  • 1/2 cup caster sugar (for sugar mix)

Description

This is a traditional Sicilian dessert doughnut served on 19th March, the feast day of Saint Joseph.

Method

Step 1 of 5

Cook rice by boiling in water with a pinch of salt, adding more water to overcook rice for best results.

Step 2 of 5

When finished cooking, while still hot, drain the rice and pass it through a potato masher/ricer.

Step 3 of 5

Place puréed rice into a bowl. Make a well in the centre, adding sugar, cinnamon, sultanas and egg; then combine well.

Step 4 of 5

Slowly fold flour into mix until spoon stands upright. Do not over mix! Rest mixture at room temperature for approx. 10-15mins.

Step 5 of 5

Heat oil in a saucepan. Drop a tablespoon of mixture into hot oil. Turn often until golden brown. Drain on a paper towel and toss the sfinci into mixture of sugar and cinnamon.
