  • 250grams butter, melted in the microwave
  • 2 cup brown sugar, firmly packed
  • 2 eggs, lightly beaten
  • 2teaspoons vanilla essence
  • 2 cup self raising flour
  • 1 cup cocoa powder (1/2 for base, 1/2 for icing)
  • 1 1/4 cup desiccated coconut (1 cup for base, 4 tbsp for icing)
  • 3 cup icing sugar mixture

Description

Easy to make and makes 18 large slices. Will keep for a week in an airtight container.
Instruction tip
I used icing sugar mixture which is cheaper than pure icing sugar. But either will work.

Method

Step 1 of 5

Preheat oven to 175°C. Line a large baking tray with baking paper. I used a 37cm x 24cm tray with 2cm sides.

Place butter, brown sugar, egg and vanilla in a large bowl and stir with a knife until combined.

Step 3 of 5

Sift the flour and 1/2 cup of the cocoa into the bowl. Add 1 cup of the coconut. Stir until mixture is well combined.

Spread the mixture evenly on your tray. I used the back of a desert spoon to press firmly into tray. Bake in the oven for 30 minutes or until just firm.

To make icing, sift icing sugar and cocoa into a medium sized bowl. Add boiling water a tablespoon at a time and stir to combine. (You will probably need about 4-6 tbsps of water) Add extra water only if needed to make a nice icing paste. Spread the icing over the slice with a knife. If you do this while your slice is still warm it will be easier to spread. Sprinkle the remaining 4 tbsps of coconut evenly over the icing. Leave to set for about an hour and then cut up while still in the tray.
