- 1 cup SR flour, sifted
- 1teaspoons mixed spice
- 1/2 cup coconut
- 3/4 cup sugar
- 3/4 cup sultanas
- 2 eggs, lightly beaten
- 90grams unsalted butter - melted
- 1tablespoons sweet sherry
- icing mixture (for dusting)
Description
A lovely spicy slice to enjoy with a cup of tea.

Method
Step 1 of 4
Gather all ingredients together. Preheat oven to 160°C Fan. Grease and line (leave overhang for ease of lifting out of tin) a 20 cm square baking pan.
Step 2 of 4
Into a large mixing bowl, sift flour and mixed spice, add sugar, coconut and sultanas, mix to combine. Stir in combined eggs, sherry and butter, mix well again.
Step 3 of 4
Spoon into prepared baking tin, smooth the top, bake for 25 minutes or until a skewer comes out clean from the centre (each oven is different).
Step 4 of 4
Cool completely in baking tin, dust over icing mixture and cut into squares.
