Sweet Potato Biscuits

- 150grams sweet potato
- 150grams self-raising flour
- 70grams butter (or similar alternative)
- pinch cinnamon
Description
A quick and healthier alternative to regular biscuits.
Method
Step 1 of 9
Preheat your oven to 190 C.
Step 2 of 9
Prick the sweet potato and cook in the microwave for about 5-6 minutes.
Step 3 of 9
Once the potato is soft, scoop out the insides and mash it in a bowl.
Step 4 of 9
Add your melted butter, self-raising flour and cinnamon to the bowl.
Step 5 of 9
Mix everything together to form a dough (using your hands is often the easiest way!)
Step 6 of 9
Roll out the dough on a floured surface.
Step 7 of 9
Cut into shapes with your cookie cutters and place them on a lined baking tray.
Step 8 of 9
Bake in the oven for approximately 10 minutes until golden.
