  • 250grams flour
  • 100grams sugar
  • 50grams lard, softened (or butter)
  • 1 large egg
  • pinch salt
  • 1/2 lemon, zest only
  • 50milliliter full cream milk (for milk wash)
  • 1teaspoons baker's ammonia (or baking powder)

Description

For all the dunkers out there - traditional Sicilian biscuits made specially for dunking in milk or your favourite cuppa.

Method

Step 1 of 5

In a bowl, bring together all of the ingredients (except milk) with your hands. Once the biscuit dough starts to come together, place it on a floured benchtop and knead until the dough becomes smooth and compact. Form loosely into a ball shape.

Step 2 of 5

Lightly flour a clean bowl. Place dough in bowl and cover with cling film. Place in the fridge for 30 minutes.

Step 3 of 5

Preheat oven to 180 degrees and line baking tray with baking paper.

Step 4 of 5

Let it rest and rise for another 15 to 20 mins. Brush on beated egg and sprinkle sesame seeds.

Step 5 of 5

Brush tops of the biscuits with milk and bake in the oven for 13 - 15 minutes until they start to brown.
