- 150grams butter, melted
- 150grams caster sugar
- 3 eggs
- 200grams self raising flour
- 2tablespoons milk
- 1teaspoons instant coffee
- 1tablespoons water, hot
- 100grams walnuts, lightly toasted and roughly chopped
- 1teaspoons vanilla extract
- 100grams icing sugar
- 1teaspoons instant coffee (for the icing on cake)
- 1tablespoons water, hot (for the icing on cake)

Description
A delicious cake for morning or afternoon tea.
Method
Step 1 of 6
Preheat your oven to 180 degrees, and line a loaf tin with baking paper.
Step 2 of 6
Using an electric mixer, whisk together the caster sugar and melted butter (cooled) Add the eggs one at a time until well combined.
Step 3 of 6
Add the vanilla, coffee mixture ( 1 teaspoon mixed with 1 tablespoon hot water) and then the milk.
Step 4 of 6
On a low speed add the flour slowly, once it is all combined turn off the mixer (do not over beat the mixer) and gently fold through your walnuts.
Step 5 of 6
Bake in oven for approx 55 minutes or until a skewer comes out clean.
Cool cake completely before icing.
Step 6 of 6
Mix together the icing sugar and second lot of coffee mixture 1 teaspoon coffee to 1 teaspoon hot water. Keep adding tiny amounts of water until you get the icing to a consistency that you like.
I just drizzle a bit of icing on the cake as we prefer it without the icing, but you can ice cake with any icing of choice.
