  • 125grams butter
  • 95grams sugar
  • 1 lemon, zest
  • 1 egg
  • 60grams dessicated coconut
  • 200grams plain flour
  • 60grams butter
  • 150grams icing sugar

Description

A quick treat to satisfy your biscuit cravings.

Method

Step 1 of 5

Preheat oven to 180 degrees. Beat butter and sugar until pale and creamy.

Step 2 of 5

Add in lemon zest and egg.

Step 3 of 5

Fold in dessicated coconut and plain flour.

Step 4 of 5

Scoop a tablespoon full of dough and roll them into balls. Bake for 20-25 minutes or until bikkies turn golden brown.

Step 5 of 5

Beat butter and icing sugar until fluffy. When bikkies are cooled, pipe buttercream and sandwich between two bikkies.
