  • 110grams sugar
  • 1 egg
  • 1teaspoons vanilla
  • 185grams self raising flour
  • 105grams plain flour
  • 1/2 cup desiccated coconut
  • 60grams butter
  • 120grams icing sugar
  • 1/2teaspoons vanilla essence
  • 2teaspoons milk
  • 8teaspoons raspberry jam

Method

Step 1 of 6

Cream butter and sugar until light and fluffy add vanilla and the egg, beat well.

Step 2 of 6

Add sifted dry ingredients and coconut, mix well.

Step 3 of 6

Roll teaspoons of mixture into balls. Put on lightly greased oven trays. Gently press down with fork to rough up surfaces of biscuits.

Step 4 of 6

Bake at 180 degrees celsius for 10-15 minutes or until golden brown. Remove from oven and cool on wire rack.

Step 5 of 6

Make icing by creaming the remaining butter, icing sugar, milk and vanilla essence.

Step 6 of 6

Put a teaspoon of the jam and a teaspoon of the icing on a biscuit and top with another one. Press together lightly.
