- 1teaspoons baking powder
- 100grams unsalted butter, room temperature
- 1 egg, beaten
- 75grams pure icing sugar
- 125grams unsalted peanuts (reserve 50g for topping)
- 220grams cake flour
Description
Inspired by my recent sample, these peanut biscuits were made using simple ingredients, less sweet and very crunchy.
Method
Step 1 of 6
Preheat oven to 170°C. Line a large baking tray with baking paper.
Crush 75g of peanuts using a rolling pin and leave aside.
Step 2 of 6
Mix butter and icing powder until pale.
Step 3 of 6
Add in the egg in 2 separate batches, mixing well before each addition.
Step 4 of 6
Sieve in cake flour and baking powder. Add in the crushed peanuts. Mix until it forms into a dough. Do not over mix.
Step 5 of 6
Take 20g of the dough and roll into a ball. Place it onto the baking pan, flatten it with your palm, press down a few peanuts on the top. Repeat until you have finished using up the dough. You can make roughly 25 biscuits.

Place into the oven and bake for around 20 minutes or until cooked.
