  • 3 cup plain flour
  • 2tablespoons white sugar
  • 250grams butter, soft
  • 1teaspoons vanilla extract
  • 1packets milk choc bits
  • 400grams vanilla frosting (to decorate)
  • 1 egg
  • 1 cup caster sugar
  • 30 fruit chews (to serve)

Method

Step 1 of 5

Beat butter and sugar in a bowl until pale and creamy. Beat in egg and vanilla extract. Stir in flour until well combined and dough forms. Wrap in plastic. Chill for 20 minutes.

Preheat oven to 180°C. Line 2 baking trays with baking paper.

Step 3 of 5

Turn dough out onto a lightly floured surface. Roll out until 4mm thick. Cut out 8cm-fluted rounds. Cut rounds in half and transfer to trays.

Push 2 choc bits into biscuit halves for eyes. Sprinkle biscuits with a little sugar. Bake for 15 minutes or until golden. Transfer to a wire rack to cool.

Step 5 of 5

Add drops of food colouring to frosting. Sandwich 2 biscuit halves together with frosting to resemble a shell. Repeat with remaining biscuit halves and frosting. Add fruit chews to frosting for pearls. Serve. Try this: To make chocolate shell biscuits, replace 1/4 cup of the flour with 1/4 cup cocoa. To make both flavours, divide dough in half and add 2 tbs cocoa to one portion.
