  • 2liter vanilla ice cream
  • 1 punnet fresh raspberries
  • 450grams maltesers
  • 375grams frozen raspberries
  • drizzle ice magic topping

Description

A family favorite dessert for Spring and Summer. Simple and delicious.

Allow for overnight freezing time when making this recipe.

Method

Step 1 of 9

Remove vanilla ice cream from freezer and allow to soften in a large bowl.

Step 2 of 9

Place 3/4 of the Maltesers into a large ziplock bag, seal and roughly crush with a rolling pin. Leave larger chunks of Maltesers for extra crunch.

Step 3 of 9

Add 1 punnet of fresh raspberries and 3/4 of the frozen raspberries to the vanilla ice cream.

Step 4 of 9

Add Maltesers to the vanilla ice cream. Mix until combined.

Step 5 of 9

Mix the fresh and frozen raspberries into the ice cream until well combined.

Step 6 of 9

Place layers of cling film into a loaf tin ensuring there is a enough overhanging to cover the top of the ice cream cake.

Step 7 of 9

Spoon the ice cream mixture into the loaf tin. Smooth the top and scatter remaining frozen raspberries and Maltesers over top.

Step 8 of 9

Fold the cling film over the top of the ice cream and freeze overnight.

Step 9 of 9

When ready to serve, remove from tin and discard cling film. Place on a serving platter and drizzle with Ice Magic. Cut into slices to serve.
