  • 225grams butter, at room temperature
  • 175grams brown sugar
  • 1tablespoons syrup from a jar of stem ginger
  • 1 egg
  • 350grams self-raising flour
  • 1tablespoons ground ginger
  • 3 balls stem ginger in syrup, drained and finely chopped

Method

Step 1 of 7

Preheat the oven to 190°C (Gas 5).

Step 2 of 7

Line two baking trays with baking parchment.

Step 3 of 7

In a bowl, mix the butter, sugar, and syrup together with an electric hand whisk or mixer until creamy.

Step 4 of 7

Mix in the egg until combined, then work in the flour, ground ginger, and stem ginger until the mixture comes together to form a soft dough.

Step 5 of 7

Roll the dough into about 35 balls, each the size of a walnut, and place on the baking trays.

Step 6 of 7

Flatten them with your fingers, then bake in two batches for 12-15 minutes, or until golden brown.

Carefully transfer to a wire rack and leave to cool completely.
