  • 1 1/2 cups organic oats
  • 2tablespoons honey
  • 1 cup desiccated coconut (for rolling)

Description

I threw together this recipe for a family member who isn't keen on breakfast. At least he will have a few of these which are packed full of oats!

Method

Step 1 of 7

Add your dried peaches into the food processor and soak in boiling water for a minimum of 30 minutes.

Step 2 of 7

Once the peaches are soaked, empty all of the hot water out and blend peaches until pureed or mostly chopped up. (Depending on which texture you prefer).

Step 3 of 7

Once the peaches are blitzed add in your oats and proceed to blitz until chopped and combined.

Step 4 of 7

Once the oats and peaches are combined add in the honey and blitz all the ingredients until you reach a thick dough like consistency.

Shape and roll balls into your desired size. Then roll on desiccated coconut.

Step 7 of 7

Viola. Peach Bliss Balls. Chill for 1 hour at this stage to firm them up, or eat them as is if you like. I usually get around 20 balls from this recipe.
