  • 185grams plain flour
  • 110grams brown sugar
  • 1/2teaspoons bicarbonate of soda
  • 1/4teaspoons baking powder
  • 1teaspoons cinnamon
  • 110grams Uncle Tobys traditional cooking oats (save 20g for later)
  • 3 large ripe bananas
  • 3teaspoons canola oil
  • 1 egg, beaten
  • 2 egg whites

Description

A great way to use up overripe bananas, this banana bread recipe is packed with oats, making it a hearty snack or breakfast option.

Method

Step 1 of 4

Preheat oven to 180°C/160°C fan forced. Grease and line a 23 x 12 cm loaf pan with baking paper.

Step 2 of 4

In a large bowl, combine flour, sugar, bi carbonate of soda, baking powder and cinnamon. Stir through UNCLE TOBYS’ Traditional Cooking Oats.

Step 3 of 4

In a medium bowl, mash bananas with a potato masher or fork. Add oil, whole egg and egg whites; mix thoroughly

Step 4 of 4

Pour batter into pan and top with extra UNCLE TOBYS’ Traditional Cooking Oats bake for 45 minutes or until cooked through. Remove from oven and allow to cool in pan for 5 minutes. Flip out and cool on a wire rack for another 10 minutes. Slice loaf into 10 equally sized slices.
