  • 50grams unsalted butter, room temperature (keep some for the baking dish)
  • 50grams brown sugar
  • 90grams self raising flour
  • 1 medium egg, free range
  • 1/2teaspoons bicarbonate soda
  • 1/2teaspoons baking powder
  • 1teaspoons allspice
  • 1 pinch salt
  • 4tablespoons milk

Description

These muffins have a light crunchy exterior and a fluffy banana filled centre.

Method

Step 1 of 5

Pre-heat the oven to 180°C/160°C fan-forced.

Step 2 of 5

In a mixing bowl, combine the butter with the sugar and eggs and combine fully.

Step 3 of 5

Add the salt and baking powder, soda, allspice, salt and incrementally add the flour.

Step 4 of 5

Lastly fold in the mashed bananas and use some milk to loosen the batter if needed.

Step 5 of 5

Lightly butter 6 muffin tins and empty the dough in and level out. Bake for 25 minutes or until cooked through.
