- 190grams plain flour
- 1teaspoons baking soda
- 1teaspoons baking powder
- 1/2teaspoons salt
- 1teaspoons vanilla extract
- 40milliliter milk (can use plant milk if desired)
- 85grams butter (or oil of choice)
- 3 large ripe bananas, mashed
- 1teaspoons cinnamon (ground)
- 1/4teaspoons nutmeg (ground)
- 1 egg
- 145grams coconut sugar
- handful rolled oats
Description
Try these delicious, moist banana bread loaves. A tasty snack for the whole family to enjoy.
Method
Step 1 of 5
Mix the flour, salt & baking soda, baking powder, cinnamon and nutmeg in a medium bowl until well combined. Set aside.
Step 2 of 5
In a separate bowl peel and mash your bananas, add the egg, vanilla, milk, sugar and butter and mix all together until combined. Now fold through the dry ingredients until combined.

If you are adding any nuts or chocolate chips now you can mix them in. The batter will be thick and chunky. Place your mix into any desired pan I use mini loaf pan but also make 12 cupcakes if using my cupcake tray. Sprinkle oats on top.

Bake at 180° c, for about 20 minutes depending on your oven. I always check mine half way through and pop a toothpick in to see how much longer they may need. They are super soft and moist enjoyed eaten warm straight from the oven! Save some for the kiddies if you can.

These muffins also stay fresh for up to 1 week at room temperature, I pop mine in the fridge tho and they never last that long around here anyways.
