- 1 cup firmly packed brown sugar
- 1/2teaspoons ground cinnamon
- 1/2teaspoons bi carb soda
- 1/2 cup milk
- 2 eggs
- 2teaspoons vanilla essence
- 3 medium ripe bananas, mashed
- 1 cup milk or dark choc chip
- 100grams butter, melted, cooled

Method
Step 1 of 4
Preheat your oven to 150 degrees Celsius fan-forced oven. Grease a 7cm deep, 12cm x 20cm loaf tin, lining base and the 2 long sides with baking paper to overhang 2 cm above edge of tin on the long sides.
Step 2 of 4
Sift flour, bi carb soda, and cinnamon into a large bowl and stir in the brown sugar. Whisk the eggs, the milk and vanilla essence in a small glass jug or small bowl. Add the milk mixture, the butter and the mashed banana to the flour mixture along with the choc chips and fold through.
Step 3 of 4
Pour or spoon batter into prepared tin, smooth the surface and sprinkle a few choc chips on top of the batter, as they tend to sink to the bottom of the cake. Bake for 1 hour. Test cake with metal skewer. Cake is done when skewer comes out clean.
Step 4 of 4
Remove cake from oven and let cake cool in the tin for 10 minutes then turn onto a wire rack to cool. Store in an airtight container at room temperature up to 3 days.
