  • 1teaspoons cinnamon
  • 1 3/4 cup SR flour, sifted
  • 1/4 cup Woolies wholemeal SR flour, sifted
  • 1/4teaspoons bicarb soda
  • 3/4 cup brown sugar (lightly packed)
  • 1teaspoons vanilla essence
  • 2 bananas, mashed (very ripe)
  • 100grams unsalted butter, melted
  • 1 egg, lightly beaten (room temp)
  • 3/4 cup milk (room temp)
  • 1 cup walnuts - chopped
  • raw sugar (optional, for sprinkling before baking )

Description

Delicious way of using Bananas past their use by date, and Woolies Wholemeal SR Flour.

Method

Step 1 of 6

Gather all ingredients together. Preheat oven to 185 degrees fan-forced. Add muffin papers to a 12 cup muffin pan and set aside.

Step 2 of 6

Into a large bowl (I'm using a glass bowl here) sift both flours (returning husks to bowl), cinnamon and bi-carb soda. Add brown sugar and mix well to combine.

Step 3 of 6

Add melted butter, vanilla, egg, milk, mashed banana and walnuts. Mix with a wooden spoon until just combined.

Step 4 of 6

Spoon mixture into muffin papers. This mixture will make 12 large muffins. Sprinkle over raw sugar (if using) into a preheated oven and bake for 20 mins (each oven is different). Insert a clean skewer to check.

Remove to a wire rack to cool completely.

Once these delicious muffins are completely cold, I usually freeze straight away into portions for hubby and I, and our son, and just defrost as required. Son takes his straight from his freezer, into his lunch box, by smoko, they are defrosted ready to go. Fresh as a daisy.
