Description

Traditional home cooked banana muffins that are so comforting served while still warm. Feel free to mix in some nuts, dried fruit or chocolate chips to the batter to make it your own special recipe.

Method

Step 1 of 3

Preheat oven to 190°C. Add the banana and eggs use a hand blender to puree the ingredients together. Whip the butter and sugar together in a bowl until smooth and airy, fold in the banana puree until combined.

Step 2 of 3

Sift together the flour and baking soda into a large bowl, add in the butter and banana mixture, fold together using a spatula until all the flour is incorporated.

Step 3 of 3

Line a 12 cup muffin tin with muffin liners. Divide the batter between the muffin cups. Bake for 25-30 minutes until a toothpick comes out clean with inserted into the center of the muffins. Allow the muffins to cool on a rack before serving.
