  • 280grams Greek style yoghurt
  • 2teaspoons vanilla extract
  • 200grams blueberries

Description

Greek yoghurt makes this healthier wholemeal muffins super moist and fluffy.

Method

Step 1 of 3

Pre-heat the oven to 190°C/170°C fan-forced and line a muffin pan with 12 paper cases.

Step 2 of 3

Whisk the flour, baking powder, baking soda and cinnamon together in a large bowl. Mix the wet ingredients together in a bowl, pour into the dry ingredients and gently mix to combine.

Step 3 of 3

Stir in the blueberries, reserving a small handful. Scoop the batter into the muffin cases, top each muffin with blueberries and bake for 18-20 minutes until golden. Cool for 10 minutes on a wire rack and serve.
