Description
Dates and ripe bananas naturally sweeten this wholesome oat flour based banana bread.
Method
Step 1 of 4
Soak the dates in a small bowl of boiling water for 20 minutes to soften. Drain and set aside. Pre-heat the oven to 175°C/155°C fan-forced and line a loaf tin with parchment paper.
Step 2 of 4
Blend the oats to a coarse flour in a food processor. Add the soaked dates cinnamon, baking powder, baking soda, bananas, eggs and vanilla and pulse to form a smooth batter.
Step 3 of 4
Stir in the chopped walnuts. Pour the batter into the loaf tin and bake for 30 minutes, or until a skewer comes out clean.
Step 4 of 4
Remove from the oven and leave to cool completely on a wire rack before serving.
