- 140grams carrots, grated
- 180grams wholemeal flour
- 1 1/2teaspoons baking powder

- 1 1/2teaspoons cinnamon
- 1/2teaspoons mixed spice
- 60grams pecans, chopped

Description
This delicious fruit sweetened loaf is a healthy dessert or afternoon snack.
Method
Step 1 of 4
Soak the oats in a small bowl of boiling water for 10 minutes to soften slightly. Drain and set aside. Pre-heat the oven to 175°C/155°C fan-forced and line a loaf tin with parchment paper.
Step 2 of 4
Add the soaked oats, oil, applesauce, eggs and vanilla and blend for 1-2 minutes to form a smooth batter. Add the grated carrots and pulse to combine.
Step 3 of 4
Whisk the flour, baking powder and soda, cinnamon and mixed spice together in a large bowl. Pour the wet ingredients into the dry and mix well. Stir in the pecans.
Step 4 of 4
Pour the batter into the loaf tin and bake for 40-45 minutes, or until a skewer comes out clean. Remove from the oven and leave to cool for at least 10 minutes on a wire rack before serving.
