- 1 packet of hard taco shells kit
- 1/4 lettuce, shredded
- 1 red capsicum , chopped into matchsticks
- 1/2 brown onion , chopped
- 30grams cheddar cheese, grated
- 2 sticks of celery chopped into matchsticks
- 1/2 red onion chopped
- 1/4 zucchini , chopped into matchsticks
- 2tablespoons extra virgin oil
- 1 tomato , chopped
Description
Try these easy and tasty veggie tacos.
Method
Step 1 of 10
Wrap taco shells in foil and put in the oven on a low heat to warm them
Step 2 of 10
Chop your capsicum, zucchini and celery into matchsticks.
Chop up the onions.
Step 3 of 10
Place all the brown onion, chopped capiscums, celery and zucchini into a pan with a little oil to soften. Using the taco seasoning from the kit add to the vegetables and stir.
Step 4 of 10
In a bowl add the red onion and a chopped tomato, mix together with a small amount of extra virgin oil to create a salsa.
Step 5 of 10
In a dish grate the cheese.
Step 6 of 10
Remove shells from the oven and foil and stand on a plate.
Step 7 of 10
Add the warm vegetables from the pan to each shell.
Step 8 of 10
Add a little cheese to the top of the warm vegetables.
Step 9 of 10
Top with shredded lettuce.
Step 10 of 10
Finish off with the rest of the cheese and the tomato and onion salsa.
