- 1 red capsicum, deseeded, thinly sliced
- 1 bunch broccolini, finely chopped
- 2 cup reduced-fat milk
- 8 wholegrain wraps
- 420grams no added salt black beans, rinsed, drained
- 1/4 cup olive oil
- 1 cup grated pizza cheese
- 1tablespoons Tabasco sauce (Optional)
- 1/4 cup green salad

Description
Shake up dinner this week, starting with broccolini and black bean quesadillas served with lime. Plus, sneak in extra veg without anyone noticing.
Method
Step 1 of 4
Heat 2 tbs oil in a small saucepan over medium-high heat. Add flour and stir for 1 minute. Gradually add milk, whisking until smooth. Stir for 5 minutes or until white sauce boils and thickens. Season to taste.
Step 2 of 4
Spread each wrap evenly with 1/4 cup white sauce and cover half of each wrap with broccolini, capsicum, beans and cheese. Fold over and press down firmly to seal.
Step 3 of 4
Heat 1 tsp of remaining oil in a large frying pan over high heat. Cook wraps, 2 at a time, for 2 minutes on each side or until golden brown and toasted. Remove from pan and cover loosely with foil to keep warm. Repeat with remaining oil and tortillas.
Step 4 of 4
Cut quesadillas in half and serve hot with lime wedges, hot sauce, if using, and a green salad.
