- 1tablespoons continental parsley
- 2 tomatoes
- 100grams hummus
- 1/4 cup Greek-style yoghurt
- 225grams classic falafel balls
- 2tablespoons olive oil
- 4 Turkish rolls

Method
Step 1 of 3
Heat a chargrill pan over medium- high heat. Brush falafel with a little oil. Heat on chargrill for 5 minutes, turning often, or until heated through.
Step 2 of 3
Meanwhile, lightly brush both sides of rolls with oil. Toast on chargill for 1-2 minutes on each side or until golden and lightly charred.
Step 3 of 3
Spread roll bases with hummus, top with tomato and cucumber. Squash falafel and add to sandwich. Drizzle over yoghurt and remaining oil. Garnish with parsley and serve topped with roll lids.
