  • 2 ripe tomatoes, sliced
  • 350grams kent pumpkin, skin on, thinly sliced
  • pinch dried chilli flakes (optional)
  • 1tablespoons pistachio dukkah
  • 30grams baby rocket leaves
  • 2tablespoons olive oil
  • 250grams haloumi, cut into 12 slices
  • 4 seed bread rolls, split, toasted
  • 1/2 cup tomato, feta, basil and cashew dip (see tip)

Method

Step 1 of 3

Heat 1 tbs oil in a large frying pan over medium-high heat. Cook pumpkin, turning, for 6-8 minutes or until golden and tender.

Step 2 of 3

Meanwhile, drizzle halloumi with remaining oil. Sprinkle with dukkah and chilli (if using). Reheat same frying pan over medium-high heat. Cook halloumi for 30 seconds each side or until golden.

Step 3 of 3

Spread roll tops and bases with dip. To serve, top bases with rocket, tomato, pumpkin, halloumi and roll tops.
