  • 1 bread rolls grain lunch
  • 1 bunch basil
  • 2 zucchini
  • 400grams mozzarella
  • 850grams canned chickpeas
  • 270grams semi-dried tomatoes
  • 1/3 cup parmesan, grated
  • 60grams rocket
  • 1/3 cup pesto
  • 1 1/2 cup panko breadcrumbs

Method

Step 1 of 2

Drain 2 x 425g cans chickpeas and grate 2 zucchinis. Place half the chickpeas and half the zucchini into a food processor with 1 1/2 cups panko breadcrumbs, cup pesto and cup grated parmesan. Pulse to combine. Transfer to a bowl. Lightly mash reserved chickpeas and add to mixture with remaining zucchini. Season and mix. Divide into 6 patties and place on a tray. Cover with plastic and chill before using (see tip).
