- 1/2 cup corn kernels
- 100grams diced onion
- 400grams field mushrooms, thickly sliced
- 1teaspoons olive oil
- 1 cup vegetable stock
- 2 cloves garlic, peeled and minced
- 1/4teaspoons salt
- 1/4teaspoons pepper
- 10grams tarragon, finely chopped
- 1 stalk celery, small diced
- 1teaspoons minced chilli
- 1 1/2 cups cous cous

Description
Part of the recipe collection that I have developed for my recent healthier eating plan.
Method
Step 1 of 5
Sauté the onion, garlic celery and carrots in the oil with the tarragon and chilli.
Step 2 of 5
Add the mushrooms and cook till cooked through and tender.
Step 3 of 5
Add the chickpeas, peas and corn, cook a further 3 minutes stirring frequently.
Step 4 of 5
Add the stock, bring to the boil, add the couscous all at once, stir well and then seal with a lid and leave 5 minutes.
Step 5 of 5
Remove lid and fluff up by stirring well, adjust seasoning and serve immediately.
