  • 1 punnet cherry tomatoes (chopped)
  • 1 zucchini (diced)
  • 1 baby cos lettuce (shredded)
  • 2 lime
  • 1 cup tasty cheese
  • 350grams Old El Paso hard 'n soft taco kit
  • 300grams Quorn Mince
  • 1/2 cup Greek-style yoghurt
  • 1 cup Umami Edamame Salad (podded)
  • 1tablespoons olive oil

Method

Step 1 of 6

Heat Oil in large frying pan. Add the onion and cook until softened. Add the Quorn Mince and 1 cup water.

Step 2 of 6

Cover and cook for 5 minutes, then add the edamame, zucchini, sweet potato, Old EL Paso taco spice mix.

Step 3 of 6

Cook for 5 minutes or until sauce thickens and vegetables are just tender.

Step 4 of 6

To make fresh salsa combine tomatoes and herbs in a bowl. Season to taste.
