  • 360grams haloumi, cut into 8 slices

  • 1/2teaspoons dried chilli flakes
  • 1/4 cup sesame seeds
  • 1 lemon, zested, juiced
  • 1/4 bunch bunch mint, leaves picked

Description

Whether you're after a light lunch or side dish, give this caramelised haloumi salad recipe a try. It's bursting with fresh, juicy tomatoes.

Method

Step 1 of 3

Place tomato, onion and zucchini in a large bowl. Season and toss to combine. Set aside.

Step 2 of 3

Heat oil in a large frying pan over medium-high heat. Cook haloumi for 1 minute each side or until golden. Add honey, chilli and sesame seeds. Cook for 4 minutes or until haloumi caramelises. Stir in zest and juice and remove pan from heat.

Step 3 of 3

Add haloumi mixture and mint to tomato mixture. Toss gently to combine. Serve.
