- 1teaspoons olive oil
- 2teaspoons apple cider vinegar
- 1/4teaspoons sriracha sauce
- 1/4teaspoons english mustard
- 70grams firm tofu
- 1/4 cup woolworths tinned corn
- 1 stalk celery
- 1 small carrot
- 1 small cucumber
- 3 slices tinned beetroot
- 1 cup mixed lettuce leaves
- 3 mushrooms
- 1/4teaspoons honey
Description
Salads are my daily go to lunch. This one is very yummy!
Method
Step 1 of 6
Cube tofu and halve mushrooms before drizzling in oil and baking in a 160 fan forced oven for 15 to 20 minutes.
Step 2 of 6
Prepare salad leaves and using a peeler ribbon the carrot and cucumber.
Step 3 of 6
Slice beetroot and chop celery.
Step 4 of 6
Prepare dressing ingredients.
Step 5 of 6
Allow tofu and mushrooms to cool slightly and then plate lettuce and add all ingredients.
Step 6 of 6
Add dressing last. Mix and enjoy.
