- 2tablespoons plain flour
- 1/2 cup coriander leaves, roughly chopped
- 1 brown onion, finely chopped
- 4 lebanese rounds (to serve)
- 2teaspoons ground cumin
- 2teaspoons turmeric
- 800grams canned lentils, drained, rinsed
- 3 slice white bread, roughly chopped
- 1teaspoons olive oil
- 1 egg, beaten
- 2 clove garlic, crushed
- 2/3 cup hummus (to serve)
- 1 cup tabouli (to serve)

Method
Step 1 of 4
Process bread in a food processor until breadcrumbs form. Put 1 cup of breadcrumbs into a large bowl.
Step 2 of 4
Heat oil in a frying pan over medium heat. Add onion and cook for 3 minutes or until soft. Add garlic, cumin and turmeric and stir until well combined. Cook for 1 minute. Cool.
Step 3 of 4
Add lentils, coriander and onion mixture to food processor. Process until well combined and roughly chopped. Transfer to bowl with breadcrumbs. Add egg and flour and stir until combined. Roll heaped tbs of mixture into 16 small patties and place onto a tray. Spray with olive oil cooking spray.
Step 4 of 4
Heat a frying pan over medium heat. Cook patties, 4 at a time for 3 minutes on each side or until golden. Transfer to a tray and cover to keep warm. Cook remaining patties. Spread with hummus. Top with tabouli and 4 lentil patties. Roll to enclose filling. Cut in half to serve.
