  • 3 cloves garlic, crushed
  • 2tablespoons plain flour
  • 1/2teaspoons chilli powder
  • 1 red onion, cut into thin wedges
  • 1/2 bunch flat-leaf parsley, leaves picked
  • 5 spring onions, chopped
  • 3 vine-ripened tomatoes, sliced
  • 1 baby cos, finely shredded
  • 1 1/2teaspoons ground coriander
  • 3teaspoons ground cumin
  • 840grams chickpeas, drained, rinsed
  • 1L vegetable oil (for frying)
  • 2teaspoons sea salt flakes
  • 2/3 cup hummus
  • 4 pita pockets, halved

Method

Step 1 of 3

Process chickpeas, parsley, onion, garlic, spices, flour and salt in a food processor, pulsing until finely chopped. Divide into 8 portions and shape into patties. Place on a tray and refrigerate for 1 hour to firm.

Step 2 of 3

Pour oil into a large, deep frying pan until 2cm deep. Place over medium heat. Cook falafel patties, in two batches, for 2 minutes each side or until golden and heated through. Drain on paper towel.

Step 3 of 3

Serve falafels with pita, cos, tomato, onion and hummus.
