  • 4teaspoons vegetable oil
  • 500grams beef rump steak (sliced across the grain)
  • 1tablespoons ginger
  • 1 long green chilli, finely chopped, halved, deseeded
  • 2 cloves garlic, crushed
  • 1 red onion, cut into thin wedges
  • 8 cup mushrooms, sliced
  • 250grams snow peas, trimmed
  • 1 bunch broccolini, trimmed
  • 1/2 small red & yellow capsicums, cut into strips
  • 60grams baby spinach leaves
  • 1tablespoons sweet chilli sauce
  • 1/4 cup roasted unsalted peanuts
  • 1/2 cup Thai basil leaves
  • 2 cup medium grain brown rice (to serve)

Description

This Thai beef stir fry recipe fuses authentic Asian flavours with tender pieces of beef and crunchy veggies served with brown rice. 

Method

Step 1 of 3

Heat wok over high heat until hot. Add 1 teaspoon oil and half the beef. Stir-fry 1 minute until seared. Remove to a plate. Repeat with another 1 teaspoon of oil and remaining beef.

Step 2 of 3

Add remaining oil to the hot wok. Add ginger, chilli, garlic and onion. Stir fry 2 minutes until soft and aromatic. Add the mushrooms, stir fry 1 minute. Add the snow peas, broccolini and capsicum, stir fry 30 seconds. Return the beef, stir-fry with spinach and sweet chilli. Stir-fry until beef warmed through.

Step 3 of 3

Remove from the heat. Scatter over the peanuts and basil. Serve over rice.
