- 300grams shiitake mushrooms, chopped
- 100grams kale, chopped
- 2tablespoons miso paste, brown
- 2tablespoons soy sauce (reduced salt)
- 300grams sirloin steak, trimmed and finely sliced
- 2 large spring onions, sliced
- 275grams rice noodles, pack

Description
Miso paste gives this stir fry fantastic umami flavour.
Instruction tip
Top with sesame seeds and chilli flakes.
Method
Step 1 of 4
In a large wok over a medium heat, heat the oils and add the mushrooms. Cook for 5 minutes until browned.
Step 2 of 4
Whisk together the miso, soy sauce and two tablespoons of water in a medium bowl, tip in the mushrooms and kale, mix and set aside.
Step 3 of 4
Place the wok on a high heat and add the steak strips, flash frying for 1 minute, tossing occasionally. Add the mushroom mix and the spring onions to the wok and cook for 1 minute, stirring.
Step 4 of 4
Add the rice noodles and cook for 1 minute until heated through, adding a splash of water if necessary. Divide between four plates and serve immediately.
