  • 1tablespoons sunflower oil
  • 1tablespoons sesame oil
  • 500grams lean steak, thinly sliced
  • 2teaspoons ground cinnamon
  • 1 onion, sliced
  • 1 fresh ginger, peeled and shredded
  • 1 red chilli, deseeded and finely chopped
  • 2 cloves garlic, finely chopped
  • 1tablespoons fish sauce
  • 200grams mixed mushrooms, such as oyster, shiitake and hon shimeji, trimmed or chopped
  • 200grams snow peas
  • 400grams udon noodles

Description

A quick dish with punchy flavours. Cinnamon and ginger, both from China, have a reputation for health benefits that science is now investigating.

Method

Step 1 of 3

Put the steak in a bowl, sprinkle over the cinnamon and stir to coat. Heat the sunflower oil in a wok, add the onion, and stir-fry over a high heat for 1 minute. Add the ginger and chilli and stir-fry for a further minute.

Step 2 of 3

Now add the steak, garlic, fish sauce, and sesame oil and continue to cook, stirring, until the meat is no longer pink. Add the mushrooms and mangetout and continue to stir-fry for a further 1-2 minutes.

Step 3 of 3

Add the noodles and stir-fry for about 3 minutes until the noodles become sticky. Serve immediately.
